However, since we also don't want to give up snacking, we have a perfect alternative for you: Low Carb Crackers. They are easy to make, vegan, healthy, and stay fresh for a long time. The most important thing is that these crackers really taste great. Because we also believe that enjoyment should not be neglected. Many Low Carb recipes or alternatives are unfortunately hardly worth mentioning in comparison to sugary snacks. However, these crackers utilize the various flavors and fats from legumes, hemp, and the refreshing taste of coconut oil. A combination that lets us indulge heartily – and all without guilt. Ingredients:
- 40g grated almonds
- 50g sunflower seeds
- 40g pumpkin seeds
- 225ml boiling water
- 1 tsp salt
- 50g chia seeds
- 50g hemp seeds
- 10g psyllium husks
- 60ml melted coconut oil
Preparation:
First, set the oven to 180 degrees Celsius (hot air) and then mix all the dry ingredients together. Next, add boiling water and coconut oil and mix until a homogeneous dough forms. Now place the dough on a baking sheet lined with parchment paper (the dough is enough for about two sheets). Place a second piece of parchment paper on top and roll out thinly (about 2mm thick). Remove the parchment paper and bake in the oven until the dough is crispy and browned. Now you can break the finished dough into bite-sized pieces and enjoy. In an airtight box, the crackers will stay fresh for even longer.
Our tip: The crackers taste particularly good with cheddar.
