Baking with hemp
Apple White Wine Cake with Hemp
Crispy shortcrust pastry on the outside, juicy apple pudding filling on the inside, and whipped cream on top. Sounds good? It is.This cake takes some time and space in the fridge, but it is truly worth it. It has everything: fruity apple, creamy vanilla pudding, a bit of wine, fluffy cream, cinnamon, and even hemp! And the great thing is, almost everything is prepared the day before, as the cake goes into the fridge overnight. Perfect to avoid stress on the day of the party. Or simply for Sunday coffee, the apple cake is always a hit! By the way, the white wine can easily be replaced with apple juice. Just reduce the amount of sugar a bit (e.g., instead of 100g, only 80g of sugar).

Ingredients
- about 1kg apples
- 50g HANAFSAN hemp flour
- 180g flour
- 125g sugar
- 125g butter
- 1 packet vanilla sugar
- 1 egg
- 1 tsp baking powder
- 400ml apple juice
- 350ml white wine
- 100g sugar
- 2 packets vanilla pudding powder
- 250ml cream
Preparation
Mix the flours, 125g sugar, vanilla sugar, and baking powder and place on a work surface. Add the cold butter in small pieces and crumble it with the flour. Crack the egg into the center and knead into a dough. Then, cover the dough and let it rest in the fridge for about 15 minutes. In the meantime, peel and grate the apples. Mix the apple juice and white wine together and dissolve the pudding powder with a bit of the apple-white wine mix. Bring the remaining liquid to a boil with the sugar. Stir in the pudding and let it come to a brief boil. Then remove from heat and mix the pudding well with the grated apples. Take the dough out of the fridge and divide it in half. Press one half of the dough into the bottom of a springform pan and press the other half along the edges. Pour the apple mixture into the form over the dough and bake for about an hour at 190 degrees Celsius (upper/lower heat). Let cool and then let rest in the fridge overnight. The next day, whip the cream until stiff and spread it over the cake. Finally, sprinkle with cinnamon and done!
