Hemp cheese spaetzle

No matter whether you call it Käsknöpfle, Käsespätzle, Kasspatzln or Chäschnöpfli, this dish remains one of the most popular soul foods in the tri-border region.

Our Käsknöpfle may not become less rich with our recipe, but for real bite, an extraordinary color, and an extra portion of protein, HANAFSAN organic hemp flour certainly delivers. Definitely give it a try!

Ingredients for Hemp Käsknöpfle: Spätzle flour, hemp flour, eggs, cheese

Ingredients

  • 400 g Spätzle flour
  • 100 g HANAFSAN organic hemp flour
  • 5 eggs
  • 2 tsp salt
  • 300 ml warm water
  • 400 g Spätzle cheese (or approx. 135 g each of mountain cheese, strong cheese, and Sura Kees)
  • 1 large onion
  • some flour
  • some butter

Preparation

Mix Spätzle flour, hemp flour, eggs and salt with the warm water until a firm dough forms. Bring a large pot of lightly salted water to a boil. Use a Spätzle press to press the dough into the water. Once the Knöpfle float to the surface, remove and layer alternately with the Spätzle cheese in a bowl. Dust onions with flour, fry in hot butter until golden brown, and pour over the Knöpfle. Best served with potato salad.
